Description Cost Controller & Purchasing Specialist, Food and Beverage 1. Ensure a continuous audit and accumulation of data for the production of daily reports. 2. Ensure that stock record systems are accurate and up to date. 3. Audit requisitions and issues of the cafë and highlight any inaccuracies. 4. Ensure that all receivable costs for both the kitchen and bar are processed speedily and held ready for rapid percentage computation. 5. Ensure that all computer input is effected daily. 6. Submit monthly reports and identify possible reasons when results differ from anticipated targets. 7. Ensure that the prices entered in programmed points of sale computers are correct and updated when necessary. 8. Ensure that menus are costed regularly. 9. Ensure that the standard/quality of all Food and Beverage purchases received up to the preset specifications. 10. Prepare feasibility studies when required. 11. Undertake any other duties relative to the Food and Beverage control function as may be directed. 12. Ensure that variances do not occur in the cafë items. 13. Maintain the Food and Beverage Management system. 14. Produce a Food Cost summary. 15. Produce a Beverage Cost summary. 16. Produce Consumption and a Consumable Consumption report. 17. Monitor daily wastage. 18. Maintain a neat and tidy work environment applying the principle of clean as you go. 19. Investigate and report on any and all Food and Beverage cost variances and stipulate recommendations. 20. Maintains product and recipe database and must be proficient with unit conversions. 21. Negotiates with vendors on pricing, specials, and incentives, aligned with the cafë.
Qualifications 3 to 5 years experience in a Stock and Accounting environment in the Food & Beverage industry. Bachelor degree in Accounting. Proficiency in MS Office. Knowledge and understanding of restaurant procedures.
